Baking these gluten-free and egg-free cinnamon rolls is possibly the biggest challenge I have ever faced. Gluten is responsible for the bread's rise because it creates air pockets within the dough. Hence, the original GFF cinnamon rolls are so fluffy and moist.
I have received a lot of requests to make gluten-free and egg-free cinnamon rolls which have gone through many experiments, mainly because the dough is too soft to be rolled up. Other times, the dough was dry and tough. At last, this version works beautifully. Unlike its wheat cousin which is fluffy and moist, these hearty gluten-free and egg-free cinnamon rolls are chewy, moist, and TASTY. They are wonderfully squishy too !
Ingredients: Tapioca flour, Sorgham flour, millet flour, cinnamon spice, butter, muscovado sugar, psyllium husk, instant yeast, icing sugar, soy milk, coconut milk, sea salt, baking powder.
Minimum order: 2 pieces per flavour.
