Most of us in Asia are quite familiar with mochi. If you haven’t had mochi, this is a good introduction. Not quite as gooey as traditional mochi and definitely not cakey like a muffin, it’s a delicious hybrid of the two. A touch of sweetness, crispy on the outside, dense and chewy on the inside. It’s different but delicious. If that wasn’t enough, they are GLUTEN-FREE and REDUCED SUGAR. You’re welcome =)

Minimum order of 6 pieces per flavour.
Glutinous flour, coconut milk, muscovado sugar, brown butter / coconut oil , eggs, baking powder, salt
Add on ingredients for various flavours:
Brown Butter - Brown butter, cinnamon, sesame
Salted Caramel Dark Choc - Pink Himalayan salt, dark Belgium choc, cocoa powder, coconut oil
Matcha Tri Choc - Japanese ceremonial match powder, Belgium white, milk and dark choc, coconut oil
Please note that these are made in the same kitchen that handles gluten, tree nuts, eggs, and dairy. If you are celiac, I highly recommend ordering your gluten-free items on Gluten Free Wednesday page as I don't bake regular products every Wednesday. Only gluten free items.
Storage: Store muffins airtight for up to 2 days at room temperature or up to 2 months in FREEZER. DO NOT put in the fridge. They do not need to thaw, just follow the directions for heating. They may need a little more time but should be good to go!
They should be reheated for max mochi experience, frozen or not.
In the oven: Preheat to 160C, bake for 3-5 minutes, cool for 5 minutes for soft center and crispy edges.
Microwave: Place on plate and zap for 15-20 seconds, test for “squishiness” and serve immediately.
