One Year. 27 Rolls. One Very Unexpected Business.

It started with my husband asking for a cinnamon roll.

Not a grand vision. Not a business plan. Just a simple request and my quiet determination to make it less sweet than what you'd find at any café. I pulled up a YouTube video, grabbed a recipe, and immediately started tweaking it. If you know me, you cannot follow a recipe line by line. There is always a tendency to change something and then pray it turns out well.

That first roll? The family loved it. So I kept making them. We started bringing them to parties, gifting them to friends. It became our thing.

And then life got complicated.

The season that changed everything

In 2019 … weeks before my birthday, and shortly after my maternity leave, I was retrenched from a job I loved in Hong Kong. I came back to Singapore, ready to find my footing again. Job searches went nowhere. And then Covid happened, sealing everything shut.

It was during that uncertain, in-between season that someone planted a seed: "You should sell these."

I laughed. I swore it would never happen. Each roll took 4 to 5 hours to make. Who starts a business around that?

And then Covid hit Singapore hard, and home baking exploded. 8Days featured Guilt Free Food and that coverage was the moment everything changed. A home-based business suddenly had an audience. I had to eat every word I'd said.

The 27 iterations nobody saw and the 5 years that followed

What most people don't see when they pick up a Guilt Free Food cinnamon roll is the obsession behind it.

Those first 27 iterations had one goal: get the reduced sugar version right. Not just technically right, genuinely delicious. Soft. Fluffy. The kind of texture-first baking where you close your eyes and forget you're eating something made with better ingredients. That was the benchmark. I refused to move forward until it was met.

But 27 iterations was just the beginning of the journey.

Over the next five years, as my baking knowledge grew, so did the mission. A gluten-free version came. That alone took years to perfect. Then a zero-sugar version. Then a high-protein, low-carb option, because the demand from the health-conscious community was real and growing. High protein isn't just a trend  it's what our customers with specific dietary needs have been asking for, and we built it in from scratch, not as an afterthought.

And alongside the cinnamon rolls, the menu expanded: mochi muffins, sourdough crackers, cookies, all made with the same philosophy. Real ingredients. No shortcuts. Treats with benefits.

What "inclusive treats" actually mean

The phrase I keep coming back to is inclusive treats. It sounds simple. It isn't.

It means a diabetic customer and her family can all order from the same menu. It means someone keto, someone vegan, and someone gluten-intolerant can sit at the same table and eat the same thing  without negotiating, adjusting, or going without. It means clean-label ingredients you can actually read and trust, because the person making them cares about what goes into them, not just what comes out.

That's what Guilt Free Food is. Treats with benefits for everyone at the table.

April 13, 2025. The day the shopfront opened. 

One year ago, Guilt Free Food opened its doors at 308 Telok Kurau Road, Vibes@East Coast. The home-based business that was never supposed to become a business had its own retail space.

This year, CNA featured us on The Long Game, a documentary about food startups in Singapore and the real challenges behind building something from scratch. It was an honest, well-received look at what it takes, and I'm proud GFF's story was part of it.

But the moments I carry most are the quieter ones. The customer who told me she hadn't eaten a cinnamon roll in three years because of her diabetes  and then she had one of ours. The families who order our rolls for weddings and birthdays. The people who come back not because there's no other option, but because this is genuinely their favourite.
